Breakfast Potatoes with Bacon & Onions
Ingredients:
2 Medium Potatoes (Idaho/Russet)
4 Slices Thick Cut Bacon
½ White Onion
1 tablespoon salted butter
1 tablespoon Extra Virgin Olive Oil
1 teaspoon Sea Salt
1 teaspoon cracked black peppercorns
½ teaspoon garlic powder
½ teaspoon paprika
dried parsley
- Wash the potatoes and poke a few holes in them with a knife.
- Cook the potatoes in the microwave for about 6 minutes (until done).
- Let the potatoes cool off so they are easier to slice, and cut each potato in half, lengthwise, then cut into 1/4” slices.
- Slice your bacon into small bite-sized pieces and set aside.
- Roughly chop ½ a white onion onion (I like fairly large slices) and set aside.
- Heat up a skillet over medium-high heat, then add enough oil to completely cover the bottom of the skillet and 1 tablespoon of butter.
- Once the oil/butter has heated up and the butter has fully melted, add the potatoes to the skillet – tossing occasionally.
- After the potatoes have been on the heat for about 5 minutes, add the Onions & Bacon, and season with the rest of your ingredients (sea salt, black peppercorns, garlic powder, paprika, parsley), and give it a good toss. You may need to use more or less seasoning depending on the size of your potatoes.
- Continue to cook until the potatoes are done (crispy) and the onions have caramelized, this should take about 10 more minutes.
