Breakfast Potatoes with Bacon & Onions

Ingredients:

2 Medium Potatoes (Idaho/Russet)

4 Slices Thick Cut Bacon

½ White Onion

1 tablespoon salted butter

1 tablespoon Extra Virgin Olive Oil

1 teaspoon Sea Salt

1 teaspoon cracked black peppercorns

½ teaspoon garlic powder

½ teaspoon paprika

dried parsley

  1. Wash the potatoes and poke a few holes in them with a knife.
  2. Cook the potatoes in the microwave for about 6 minutes (until done).
  3. Let the potatoes cool off so they are easier to slice, and cut each potato in half, lengthwise, then cut into 1/4” slices.
  4. Slice your bacon into small bite-sized pieces and set aside.
  5. Roughly chop ½ a white onion onion (I like fairly large slices) and set aside.
  6. Heat up a skillet over medium-high heat, then add enough oil to completely cover the bottom of the skillet and 1 tablespoon of butter.
  7. Once the oil/butter has heated up and the butter has fully melted, add the potatoes to the skillet – tossing occasionally.
  8. After the potatoes have been on the heat for about 5 minutes, add the Onions & Bacon, and season with the rest of your ingredients (sea salt, black peppercorns, garlic powder, paprika, parsley), and give it a good toss. You may need to use more or less seasoning depending on the size of your potatoes.
  9. Continue to cook until the potatoes are done (crispy) and the onions have caramelized, this should take about 10 more minutes.
