Pumpkin Soup!

I wanted to put a few recipes out there on the internet for the holiday season, my favorite of which is Pumpkin Soup. You can use canned or fresh pumpkin, both are great. Canned pumpkin has a milder, sweet flavor, which means you don’t have too many additional seasonings to add.

PUMPKIN SOUP

A Can of pumpkin (16 oz)
Can of low sodium vegetable or chicken stock, or use your own. (8 oz)
One yellow Onion
1 teaspoon Butter
2 tablespoon extra virgin olive oil
Salt and pepper to taste
Dash of curry
4-5 tablespoons of cream
Package of wild rice

To DO!
Chop onion
Saute chopped onion with butter and olive oil in a large saucepan until they are translucent.
Add in chicken or veggie stock. Stir for 5 minutes.
Add in can of pumpkin, stir, add in spices. (if you want a thinner soup, or feeding upwards of 4-5, add a half can of stock or cup of water)
Let simmer on medium for 10 minutes. Stir.
Begin rice- fix according to directions on box.

Ladle soup out into 4 bowls, add in a scoop of the cooked wild rice, gently stir.
Add a tablespoon of cream to each bowl and give a stir to create a swirl.
Serve!

This recipe is easy to double or halve, takes about 20 mins from prep to finish, and is a tasty hearty accompaniment to Thanksgiving dinner anytime you want something hearty!
