StRAWberry Pie

This recipe was shared with us by our friends at Raw Food Rehab. Since summer is here and strawberries are coming into season, my wife and I looked for recipes featuring strawberries and found quite a few. But this one really peaked our interest. So I gave it a shot, especially since I already had a couple of young coconuts in the fridge, and it came out wonderfully. I recommend putting this in the freezer for a nice cold treat for these hot humid summer days.
Crust:
½ cup Almonds
½ cup shredded Coconut
1 heaping TBS of Cacao Powder
I TBS of Coconut butter (or oil)
Pinch of Sea Salt
2-3 soft Dates (I always recommend Medjool dates)
1-2 TB of Cacao nibs
¼ tsp of vanilla extract
-Process nuts, shredded coconut, salt, cocao powder and vanilla in a food processor until fine crumbs
- Add dates and cacao nibs and process just until the mixture begins to stick together
- Press into the bottom of a nine-inch pie or tort pan
Filling:
The meat of 2 Young coconuts (save the water for smoothies)
2 cups of fresh strawberries
1 TBS of Agave nectar (You can also use dates or honey)
1 TBS of coconut butter (optional)
- Blend all ingredients in a food processor until smooth.
- Pour filling on top of crust.
Topping:
Use sliced strawberries spritzed with fresh lemon juice. I recommend topping with these just before you serve.
